"Turkey Loaf with Greens"

[Taken from Greens, Glorious Greens]

 

Serves 4 to 6

1 1/3 lbs ground natural turkey breast

½ cup minced onion

¾ cup fresh whole wheat crumbs

1 egg

1/3 cup minced celery

3 TB chopped fresh parsley

1 cup finely chopped swiss chard leaves, stripped from stalks

½ teaspoon minced garlic

¼ cup milk or non-dairy beverage

½ teaspoon salt

freshly ground white or black pepper

½ teaspoon dried thyme

½ teaspoon dried oregano

½ teaspoon dried basil

Dijon mustard as needed on top

  1.  Preheat oven to 350 degrees Fahrenheit. Oil a 9-inch pie plate (or a loaf pan if you intend to use leftover for sandwiches) and set aside.
  2. In a medium-size bowl, mix all ingredients except mustard. Pour mixture into the prepared pie plate.
  3. Spread top with a layer of Dijon mustard and bake 45 minutes, or until meat begins to pull away from sides of pan. Allow to stand for 10 minutes before cutting into wedges. Serve with additional mustard if desired.

P.S. To make the bread crumbs yourself, place 3 pieces whole wheat sandwich bread in a food processor with the metal blade. Process for about 1 minute until bread crumbs are formed. (This is a great option to avoid hydrogenated oils and preservatives, if you use natural bread)

Also, I personally usually increase the amount of herbs as we love their taste.
